A few years ago I faithfully linked up my weekly menu plans at I'm an Organizing Junkie blog. I quit for a long time, but now that Michael and Elizabeth are joining us for lunch almost every day, I have been cooking more and needing to plan ahead better. So, back to the menus I go, and I have to say my meals have certainly improved in quality since I have more of an "audience." :)
Sunday: Grilled Shish ka bobs with Soy Garlic Marinade, Mexican Cornbread, Cowboy Cookies
Monday: Tacos with Black Bean Salsa
Tuesday: BBQ brisket sandwiches, chips and leftover black bean salsa, grilled stuffed mushrooms
Wednesday: Lemon Glazed Chicken, wild rice mix, baked yellow squash
Thursday: Stuffed baked potatoes with roast beef, mixed veggies
Friday: Chicken Tetrazzini, garlic bread
Saturday: Grilled burgers
This weekend we grocery shopped and bought a LOT of meat for the freezer. I came home and promptly put two roasts in the crock pot with some Picante Sauce and cooked them all afternoon/evening. They are ready to cut up and divide for the freezer. I use the roast for stuffed baked potatoes, chimichangas, and just as the main dish with garlic mashed potatoes or in an open faced sandwich. We will get several meals from these roasts.
We also bought chicken (on sale), brisket and ground beef. I divide up the beef and cook what I have menus planned for, and make patties for the grill with the rest. We do love grilled burgers! The brisket will also feed us for more than one meal. It takes a little time to get the food all prepped for the freezer, but it allows me more time to do things that I love more than cooking!

I wish we'd get on the whole menu planning thing. It'd make life a heck of a lot easier, around here :)
ReplyDeleteI have to do a better job w/ the menu thing too. My guy has some health issues that are forcing him, and me, into a new way of eating. Low carbs, low fat, low salt, low cholesterol.
